Dinner Dilema.... Allergies, dislikes and health risks.?

Ok I have a large family that I prepare food for on a regular basis...
Sister-in-law is lactose intolerant, Mom can't have salt due to high cholesterol, Dad is diabetic and won't eat rice or noodles.
I need help figuring out meal ideas. Sick of meat-potatoes-vegetables and not having any change. I used to cook large gourmet meals and now I don't know how to plan around all the dietary needs.
